Cream of Chicken (minus the can)

Do you know what’s in a can of cream of chicken soup?  It’s not pretty.  Honestly, I use it from time to time because, well… I’m really lazy.  But it’s crazy easy to make your own!  It tastes a lot better too.

1/2 cup butter

1 onion, minced

2 cloves garlic, minced

1/4 cup flour

1/2 t salt

1/4 t pepper

3 cups chicken broth

1 cup milk

1 cup cooked, chopped chicken (I used canned.  Yeah, there’s that lazy thing again!)

1. Saute onion and garlic in butter until soft and translucent.

2. Stir in the flour, salt and pepper until the flour is smooth.

3.  Slowly add chicken broth and bring to a boil over medium heat, stirring constantly.  Continue to stir and cook until thickened, about five minutes.

4.  Stir in the milk.

5. Stir in the chicken.

Seriously, five steps.  Not quite as easy as opening a can, but nearly!
