Shepherd’s Pie (or, what to do with a boatload of leftover mashed potatoes)

What do you do when your husband convinces you to make twenty pounds of potatoes for twenty people?  Well first of all, you have a ton of mashed potatoes left over!  I’m pretty sure that was his actual plan.  Shepherd’s pie is a great way to use up a bunch of them!

You’ll need:

2.5 lbs ground beef

6 cups mashed potatoes

4 cups frozen mixed veggies

1 large sweet onion

3 cups beef broth

1/2 teaspoon garlic salt

1/4 teaspoon pepper

3 Tablespoons corn starch

1/2 cup water



Brown the ground beef.

Drain the ground beef, then add the onion and cook until softened.

Add the garlic salt and pepper.

Mix the cornstarch and water together well in a cup, glass, small bowl.. whatever. 🙂

Add broth to beef and onions and bring to a simmer.  Add the mixed cornstarch and water and stir constantly until broth is thickened.


Add the mixed veggies and stir together.

Preheat oven to 350 degree and wave to the camera.  (You can skip that part.)

Pour meat and veggie mixture into a greased 9.5″x11″ dish.

Put potatoes on top.  You could get all fancy and put your potatoes into a ziplock bag and snip off a corner, then pipe them onto the top of the meat and veggies in a beautiful design.  I, clearly, am not Betty Crocker so this is the best you get. 🙂

Put in the oven and bake for 30 minutes.
