Chicken Paprikash for Instant Pot

My sister was the queen of chicken paprikash for years!  I so looked forward to the nights she invited us over for dinner and served up this yummy comfort food.  Life gets busy, and it becomes harder and harder to find time to get together for meals.  I couldn’t stand waiting for her paprikash any longer, so I came up with my own version for the Instant Pot.  Now I’ll have to have her over for dinner to share it!

Chicken Paprikash for Instant Pot
An updated version of this classic comfort food for the Instant Pot. It takes a little time to bring it all together, but it's so worth it!

Instructions
Cook Chicken in Broth
  1. Press the "saute" button on your Instant Pot. Once "hot" is displayed, add oil and onion and saute until onion is translucent.
  1. Add chicken to pot, and brown slightly on all sides, turning often.
  2. Remove chicken from pot, and add Lawry's seasoned salt, paprika, water, and Better than Bouillon base.
  3. Stir well and return chicken to pot.
  4. Close lid, set to seal, and press the "manual" button and adjust time to read 20 minutes. Pot will take a little while to come to pressure (up to 30 minutes) because it's quite full. When time is up, allow pressure to release naturally before opening the pot.
While Chicken is Cooking, Prepare Dumplings
  1. Add flour, water, eggs, and salt to large mixer bowl. Using either stand mixer, or hand mixer, mix ingredients until no lumps remain.
  2. The mixture will be fairly thin and slightly soupy. This is normal.
  3. Bring water to boil in a large pot. Have a colander nearby, sitting over a bowl to drain cooked dumplings.
  4. Add spoonfuls of batter to the water, using another spoon to gently scrape each spoonful of the batter into the boiling water. Cook for about 3-5 minutes, or until dumplings float to the top of the water. Cook in large batches, without crowding the pan.
  5. Remove to colander to drain. Rinse and set aside.
Finish the Broth
  1. Using a whisk, mix the sour cream, water, and flour together. Whisk until smooth and no lumps remain.
  2. Remove chicken from pot, and press the saute button.
  3. Stir sour cream mixture into cooked chicken mixture in the Instant Pot. Stir until well combined and simmering.
  4. Add chicken and dumplings to the pot and stir to combine. Enjoy!
